Breakfasts tend to be something quick like organic cereal, homemade waffles, homemade muffins, or a protein bar for my son or those Belvita breakfast cookies (big box from Costco) or a strawberry fig whole wheat bar for me. Sometimes I'll make a yogurt parfait or a protein drink. Plus coffee. Always coffee.
Lunches tend to be leftovers, pizza, Annie's mac n cheese, salad, oatmeal, or sandwiches.
Food Goals
- I want to use up things in the pantry, fridge, and freezer so I can clean them out and reorganize the contents.
- I want to keep dinners simple so my son can go to bed early since school starts this week.

We eat a lot of leftovers for both breakfast and lunch, and dinner:) I tend to cook more than we need every. single. time!!!
ReplyDeleteI haven't made a plan yet this week, but it is high on my list. I still have a lot of garden produce to make my meals around, and am enjoying having all those veggies.
Since we had a cooking challenge where the roast, potato and carrot crock pot meal was not ready in time for the family Sunday dinner yesterday, we still have lots of that left over, as it finished up fine about 2 hours after the meal. We hustled around and made a taco dinner with Spanish rice, and have a lot of that left, as well. That will keep us going for a few days, both for lunches and dinners. I made myself a quick stir-fry after getting home from work and errands tonight, and the rest of the family ate their choice of those items before I made it home.

ReplyDeleteI need more leftovers in my life. I think I'll try to cook more than we need and make big batches of waffles, muffins, etc. for easy meals.
